Like Mrs. Beeton in the 19th century Hannah Glasse worked at a furious pace, often ‘borrowing’ the recipes of others without proper acknowledgment. Unfortunately this was quite common at the time but, to Glasse’s credit, research has confirmed she plagiarized far fewer recipes than previously believed. Also, she often made her own improvements to the borrowed recipes. For many years it was believed Glasse’s book had been written by a man, the discussion of which prompted lexicographer Samuel Johnson to remark that “women can spin very well, but they cannot make a good book of cookery.” In this instance Johnson was wrong — modern scholars have identified historical documents supporting Glasse’s claim of authorship. 220 pages.
