A culinary treasure written by E. S. Dallas. The opinionated, witty Eneas Sweetbread Dallas wrote literary & theatre reviews for the London Times, but was very knowledgeable about cooking as well. This, his encyclopedic-format cookbook, contains entertaining articles on every aspect of food and eating, with topics ranging from absinthe to zootje. Auguste Kettner, former chef to Napoleon III and owner of Kettner’s restaurant in Soho, provided the recipes for his friend Dallas’ book. Dallas displays thorough knowledge of French culinary technique and provides fascinating historical background for many of the topics and recipes. Facsimile reprint. 500 pages. Hardcover. Import.
